Cake:
300 grams of butter
170 grams of rice flour
150 grams of buckwheat flour
140 grams of potato flour
100 g xylitol or sugar
4 yolks
pinch of salt
Apple mass:
1.5 kg of apples
about 100 grams of xylitol or sugar - or less depending on the type of apple used
juice of 1/2 a lemon
1 flat teaspoon of cinnamon - optional
Combine butter, flour, xylitol or sugar, yolks and salt, kneading the dough. Divide into two parts and put in the fridge for about half an hour. Take it out of the fridge and put one part of the dough on a baking tray covered with butter and flour (dimensions approx. 33 × 22 cm). Bake for about 5-10 minutes in an oven preheated to 180 degrees.
Wash the apples, peel and cut into pieces, remove the nests with stones, grate, put in a pot, add xylitol and possibly cinnamon, simmer on fire until the apples become soft. Add lemon juice. Get a little cool.
Put apples on a cake pulled out of the oven, put the rest of the dough on top - crush the dough in your fingers or scatter plucked pieces of dough. Bake in an oven preheated to 180 degrees for about 25-30 minutes, until the top turns golden brown.
