How to prepare acacia syrup?

Acacia syrup is prepared with acacia flower petals, which harvests at flowering, most often between May and June. It is best to collect flowers in the evening or in the early morning after the dew descends on a warm sunny day. It is important to choose a place to harvest, preferably if it is away from the street.

Preparation of acacia syrup is very simple. Need:

  • 3 full glasses of acacia petals (no flower bottom, only the petals)
  • 250 g sugar
  • 0.5 liters of water
  • half a lemon
  1. We gently collect acacia flowers, being careful not to crush them or brew them too much. Preferably in a canvas sack or wicker basket.
  2. Wash and dry acacia flowers in an airy, shady place. After bringing home, put it out for a few hours in the newspaper to allow them to leave their interior by various small creatures :) Flowers are well dried, if they retained their white color.
  3. Pour water previously boiled.
  4. We brew lemon zest and cut into slices, add to acacia.
  5. We cover and set aside 24 hours.
  6. We add sugar and mix thoroughly.
  7. Strain through gauze after 12 hours. Pour pure acacia syrup into boiled jars or bottles.
  8. If we want to store the syrup until winter, we pasteurize and cool by placing jars on the lid to cool.
