For the filling:

  • 1 chicken breast, minced
  • 1 small onion
  • 1 tablespoon of virgin olive oil
  • 2 minced garlic cloves and Salt

For the bechamel sauce:

  • 40 gr butter or margarine
  • 40 gr wheat flour
  • 1/2 liter whole or semi skimmed milk

2 beaten eggs / breadcrumbs

1. Put a tablespoon of oil in a frying pan.

2. When it is hot, add the finely chopped garlic and the onion, cut into very small pieces, and let them cook.

3. Add the minced chicken breast to the onion and let it cook for about 15 minutes, or until the meat is done. Season it and reserve.

4. In a saucepan, add the milk and bring it to the fire until it starts to boil. Reserve.

5. To the stewed chicken, add the butter and, once melted, add the flour little by little to toast it for a few minutes, without stopping to stir.

6. While stirring, add the hot milk until the mixture begins to thicken.

7. Put the mixture on a flat plate and let it cool to make the croquettes.

8. With the help of two spoons, shape the croquettes.

9. Pass them, one by one, through the breadcrumbs and then through the beaten egg

10. Put a frying pan on the fire with oil to fry, and when hot, add the croquettes.

11. Fry the croquettes until golden brown on all sides.

12. Remove them from the pan and leave them on a plate lined with absorbent paper until serving time.
